About us
The history of La Salita Restaurant began over 40 years ago with an Armenian couple that had a passion for serving delicious food and entertaining people.
They hired a young, spirited Italian server, Cindy, who would end up taking La Salita to the next level. Cindy learned so much about people and food from her mentors, and spent the next few decades building a restaurant that values relationships with the community and serving quality homemade New Mexican food. Yes, a young Italian woman decided that the flavors of New Mexico, paired with a nature to serve, would be the canvas for her future. A little hole-in-the-wall restaurant has grown to a counter-service, home-away-from-home for locals and travelers alike.
Cindy was able to achieve this all while raising three children by herself. She was later supported by her partner, Rory, who is a very familiar face at La Salita. Rory joined the La Salita Family in the early 90’s and has been a big part of the restaurants continued success and customer connections. She has become known as Momma Rory by staff and customers alike and is still very active in the day to day operations of the restaurant. Cindy’s daughter, Stephanie, has gladly accepted the challenge of being the next generation owner of La Salita. This has set the stage for Cindy to take a break and retire after 44 years of amazing hard work. Cindy now gets the gift of time to help raise her grandchildren and care for her family in new ways. Although she is retired, it never stops her from popping in to give a hug or cast her warm smile on the team. She is La Salita, now and always.
Everyday, we work to maintain Cindy's spirit and commitment towards consistency, quality, and most importantly, a connection to the community that has made her restaurant a success after all these years.
